Vinegar Coleslaw: Crisp, Bright, and Built for BBQ

Not every BBQ side needs to be rich and creamy. Sometimes the best thing on the plate is the one that cuts through all that smoky, slow-cooked goodness and gets you ready for the next bite. This vinegar coleslaw does exactly that. Crisp cabbage, tart Granny Smith apple, sweet carrots, fresh herbs, and a tangy apple cider vinegar dressing come together to create a slaw that's refreshing without stealing the spotlight. There's no mayo here. Just fresh ingredients that pair perfectly with smoked pork, ribs, chicken, or just about anything coming off the grill.


We made this alongside our apple-smoked pulled pork with blackberry vanilla BBQ sauce, and it quickly became one of those recipes that quietly made the entire meal better.


Ingredients

Slaw

  • 3/4 medium green cabbage, finely shredded

  • 2 large carrots, grated

  • 1 Granny Smith apple, julienned

  • 1 green bell pepper, very thinly sliced

  • 4 green onions, thinly sliced

  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/3 cup apple cider vinegar

  • 1 tbsp honey

  • 1 tsp celery seed

  • 1/2 tsp granulated garlic

  • 3/4 tsp kosher salt

  • 1/2 tsp coarse black pepper

  • Optional: 1/4 jalapeño, very finely minced


Prepare the Vegetables

Thin slices make all the difference. Every forkful should have a little bit of everything.

  • Finely shred the cabbage.

  • Grate the carrots.

  • Julienne the Granny Smith apple.

  • Slice the green bell pepper as thinly as possible.

  • Thinly slice the green onions.

  • Chop the parsley.


Combine everything in a large mixing bowl.


Make the Dressing

This simple dressing lets the fresh vegetables do the talking.

  • Whisk together the apple cider vinegar, honey, celery seed, granulated garlic, kosher salt, and black pepper.

  • If using jalapeño, stir it into the dressing.

  • Whisk until the honey is completely dissolved.


Toss the Slaw

Give the vegetables time to soak up all that flavor.

  • Pour the dressing over the vegetables.

  • Toss until everything is evenly coated.

  • Refrigerate for 45 minutes to 2 hours before serving.


Taste and Adjust

The cabbage will mellow the dressing as it sits.

  • Taste the slaw just before serving.

  • Add another splash of apple cider vinegar if you'd like a brighter finish.

  • Adjust the salt and pepper to taste.
