Grilled Ćevapi — The Heartbeat of the Balkan Grill
If there's one dish that unites the Balkans over fire and smoke, it's ćevapi.
No casing. No frills. Just a juicy blend of meats kissed by flame and served with pillowy flatbread, fresh onions, and a generous spoonful of ajvar.
A hot grill. A cold beer. A plate of ćevapi shared with friends. That's the whole vibe.
What You Need
The meat (makes ~30 ćevapi):
1 lb ground beef
½ lb ground lamb
½ lb ground pork
4 cloves garlic (minced fine) (or more if you want!)
1 tsp salt
1 tsp black pepper
1 tbsp sweet paprika (or more if you want!)
½ tsp baking soda
What To Cook On
Pretty much any grill works here. Crank up the Kamado, fire up the Blackstone, or use both for a little smoke and sear action.
Bus Stop Method
Mix the meat.
Combine all three meats in a bowl
Add garlic, salt, pepper, paprika, baking soda, sparkling water
Mix with your hands until just combined — don't overwork
Cover and refrigerate at least 4 hours, ideally overnight
The rest is critical. The flavors meld and the texture sets up.
Shape them.
Take small portions and roll into finger-sized logs — about 3 inches long, ¾ inch thick
Don't make them too big. Traditional ćevapi are small and you eat a pile of them.
Lightly oil your hands to keep the meat from sticking
Smoke 'em if you got 'em

But note: this doesn't replace the grilling hot and fast. You need that sear
Before moving to "Grill hot and fast" think about hitting them with some smoke for 15-20 minutes on a lower heat so they don't cook too much. Heat the smoker to 225 degrees, throw in your favorite wood chips, and let the smoke work it's magic while your grill heats up

Get your grill as hot as it goes — direct heat
Oil the grates
Lay the ćevapi perpendicular to the grate bars so they don't fall through
Cook 2–3 minutes per side — you want a nice char
Turn them gently. They're small and delicate until they firm up.
Done when firm but still juicy inside — don't overcook these
Serve immediately. Eat with your hands. This is not a fork-and-knife situation.
What to Serve With
Ajvar (roasted red pepper spread). You can't have cevapi without ajvar!
Lepinja flatbread or thick pita. Get ready for sandwich mode
Raw white onion (diced or sliced). Or even better: caramelized onion
Kajmak or sour cream
Optional: pickled hot peppers
French fries (Balkan tradition — don't fight it)
Cold beer or sparkling water with lemon
Why This Works
The three-meat blend does the heavy lifting. Beef for flavor, lamb for depth, pork for fat and juiciness. The baking soda keeps them tender despite the high heat. The sparkling water adds lightness.
And the simplicity is the point:
No casing means more surface area for char
Small size means more crust-to-meat ratio
The char + the ajvar + the raw onion = the perfect bite every single time
Pro Tips
The overnight rest makes a huge difference — don't skip it
If they're sticking to the grill, your grill isn't hot enough or your grates aren't oiled
Make a double batch. They disappear faster than you think.
Leftover ćevapi reheat great on a flat top or in a hot pan
If you can't find lepinja, thick pita or even a hoagie roll works

Ćevapi is simple food done right. A hot grill, a good meat blend, and toppings that don't try to be more than they are.
